Quick, Easy, Healthy Dinner

I love ordering noodle bowls from various asian restaurants, but never really thought to try making them at home....until now!

I tried it and will definitely be doing it again.  It was really quick and simple!


What I used:
shredded lettuce
rice noodles (vermicelli)
chicken (ground ginger, garlic powder, salt & pepper to taste)
shredded carrots
finely chopped parsley
crushed peanuts

1/2 cup water
1/4 cup fish sauce
3 Tbsp vinegar
2 Tbsp brown sugar
1 crushed red chile

Cook chicken in skillet and season with above mentioned spices
Place noodles in boiling water & stir until they're cooked (not very long!) and drain. 
Mix all ingredients for sauce well. 

Place shredded lettuce in the bottom of bowl.  Dish the noodles on top of the lettuce.  Toss chicken on top, add carrots, parsley, peanuts.  Spoon as much or as little of the sauce over top and enjoy!
