Quick & Easy Low Carb Dinner - Roast Beef

This isn't so much of a recipe as it is "look what I made" :)

I took a typical roast beef dinner and subbed mashed cauliflower for the potatoes.  I tried following a recipe, and then quit. lol

All I did was boil the crap out of my cauliflower, throw in some butter, garlic, grated parm, and sour cream (if I had had cream cheese, I would have used that instead).  I mashed it all up with my potato masher, but in the future I'll be using my hand blender (yes, I REALLY love this thing!) for a creamier texture.

The roast was done in the slow cooker, and if you wanted to be extra lazy, chuck the carrots in with it.  (I didn't have the foresight to prepare my carrots the night before, so they were just boiled plain-Jane)

Ommm nom!
